About: Olivia Hawkins has been the pastry chef at the award winning etch. by Steven Edwards in Sussex since its opening in March 2017 and was key to the team attaining 2AA rosettes, Michelin plate & 5 in the good food guide just 4 months after opening. Prior to etch. Olivia held positions at some of Brighton’s Bests restaurants including the Coal Shed & The Salt Room. Olivia creates seasonal desserts for each menu and has recently been developing a range of chocolates to enjoy after dinner.
